can we just talk about how much i love asian food stores for labels like these?the one here in wilmington is the saigon market, and they have SO MUCH STUFF.  super helpful employees, too. 
will be attempting to make tom kha gai (most delicious soup i have ever encountered, if done right) tomorrow, so i needed to pick up some ingredients i would otherwise never have even known the existence of.  i got:
-straw mushrooms-kaffir lime leaves, which smell absolutely amazing-galangal, which is similar to ginger but has a more “peppery” flavour-lemongrass (basically just a long stick that i have to cut up and pound), and-fish sauce 
i apparently bought the hardcore stuff that is made up of the bits of anchovy and crap they ferment in order to make the golden clear oil-like fish sauce that’s more common.  when i opened the bottle (which had a beer cap under the lid, wtf) i almost threw up from the smell.  a mix of vomit, shit and fish, if i’m gonna be honest.  i still used it in the crab salad recipe i made a bit ago, and it tasted great overall, but i think i’ll be going back to the market tomorrow to pick up the less scary kind to use in my soup.
